For instance, Junmai Sake is made purely from rice, water, and Koji mold, while Honjozo Sake has a small amount of distilled alcohol added to it.

I was amazed to learn that the quality of Sake heavily depends on the quality of rice and water used, and the skill of the Toji, or the master brewer. The whole process is a delicate balance of science and art, and I have immense respect for the brewers who dedicate their lives to perfecting this craft.

Now, Sake has become an integral part of my daily life. I enjoy it with meals, as it pairs well with a variety of dishes, from sushi to steak. I also love to share it with friends and family on special occasions. There’s something about the ritual of pouring Sake from a beautiful Tokkuri (Sake flask) into small ochoko (Sake cups) that makes the moment feel more special.
